Journeyman is renowned in the US as one of the relatively few organic whiskey distilleries, with an almost obsessive approach to sourcing the grain that goes into their spirit.\u003c\/p\u003e\n\u003cp\u003eThe barrels were shipped directly from the distillery whilst still wonderfully fresh. When they arrived, they filled the distillery with the most incredible aromas of Bourbon, vanilla, caramel and sweet oak.\u003c\/p\u003e\n\u003cp\u003eAfter two years, The Wight had taken on just the right amount of sweetness from the American oak, and it was time to give it a new home. For its next chapter we headed to Europe: a gorgeous French oak barrique that had previously held rich Port, shipped all the way to Australia and re-coopered into a 100-litre cask for us by Murray River Coopers.\u003c\/p\u003e\n\u003cp\u003eThe result is exactly why we love doing this.
