Our first whisky. (RELEASE DATE NOVEMBER 2020)
Made using 3 different malts, grown and malted in NSW. Additional depth is added with a fourth malt from the Scottish Borders. 4 x 50 litre Ex-bourbon Octave casks from Kentucky were blended for this release.
Brewed, fermented, distilled and bottled in Kinglake using un-filtered spring water straight from the source. Created, by hand, using a traditional copper pot still from Tasmania and 80% Australian malt from Griffiths New South Wales.
