DISTILLER'S DIARY 7TH MAY 2024

Kinglake Distillery is totally off-grid and although we use gas to fire the still, all our other power is supplied by a solar array, backed-up by a 18 KVA generator. The solar has been so good that the only problem is that when I do need the genny, sometimes it doesn't work quite right, and it's difficult to diagnose the issue. My main concern is that I run out of power half-way through a distillation and the pump supplying the condenser stops, losing us lots of product. I just have to keep a close eye on the power until I work out what's what.
