The Kinglake Character
The very best single malts always deeply reflect their environment and are shaped by the weather, water, landscape and traditions of their home. This powerful connection between spirit and place inspired the foundation of Kinglake Distillery.
We set out to create a whisky unmistakably of its’ environment. Where the key to flavour is not primarily the cask but the core Kinglake character.
Water, Air and Fermentation
High in the mountains north-east of Melbourne, Kinglake provides a remarkable natural canvas to work with: towering eucalyptus forests, crystal-clear spring water and an isolated off-grid location surrounded by bushland. Every part of that environment influences the spirit we make.
Shaped by Water & Wilderness
The foundation of our whisky is natural spring water sourced directly from Chyser Creek. Its exceptional mineral characteristics and untouched purity became one of the defining elements of our spirit.
Our wild location also allows us to ferment differently. We use open wash-back and open-door distilling, allowing ambient yeasts and eucalyptus pollens drifting through the surrounding forest to become part of the whisky-making process itself.
Old Fashioned Methods
We distill in a deliberately old-fashioned style, taking our final cut unusually deep into the tails or feints. Combined with our four-grain mash bill, this creates a spirit with unusual richness, texture and depth and preserves as much character as possible rather than refining it away.
Crafted by the Elements
Kinglake’s climate continues shaping the whisky long after distillation. The combination of mountain humidity, cool conditions and Australian seasonal variation produces unique ageing conditions for the whiskyoncein the barrel.
The Underground Dunnage
The next chapter for Kinglake Distillery is our underground dunnage warehouse—designed to allow whisky to mature slowly beneath the forest floor in cool, humid mountain conditions.
Rather than creating a perfectly temperature-controlled industrial warehouse, the aim is to build something deeply connected to the landscape itself, where time, climate and environment quietly shape the spirit over decades
