DISTILLER'S DIARY - 26TH JUNE 2025

Our whisky mash-bill includes four different types of malted barley.

25% Simpsons Heavily Peated (From the UK)

50% Atlas (Voyager)

21% Vienna (Voyager)

4% Chocolate Roasted (Voyager)

We use traditional M1 Whisky yeast (as well as local yeasts and pollens from our open fermentation)

Our recipe has stayed (and will always stay) the same since the first barrel filled. We are aiming for a specific Kinglake taste to be the foundation on which we build the brand.
