Our First ever collaboration and who better to do it with than Mr Whisky himself Dan Woolley! Highwayman and Kinglake have markedly different approaches to making whisky.
Dan Woolley’s focus has always been ensuring that he has the best casks available and that he extracts the maximum flavour for each whisky he releases.
Kinglake are very proud of their unique processes and aim to ensure that whatever wood is used during ageing process is doesn’t over-power the underlying spirit.
And the result, marvellous!
Kinglake took the early plunge to fill American Oak, Rye whisky casks rather than sticking exclusively to bourbon and our Breakfast Rye Cask single malt has been a big hit. Till Death marries this with Dan’s Fino Sherry cask Highwayman.
The delicate, yet spicy rye cask malt blends seamlessly with that from the Fino cask, the driest, palest, and most delicate of traditional Spanish sherry.
Delicate but at the same time beautifully dense.
