Making new batches of whisky today which is mostly an outdoor process here at Kinglake Distillery. I use the forklift to empty the barrels over a stainless vat. Normally each batch involves between 5 and 10 barrels.

Just having a good look through the bond-store for the first time since this really good stint of hot weather. The ambient temperature makes a huge difference in the activity of the oak on the whisky. 

All our barrels are filled close to the Scottish standard of 63.5% ABV and when we decant they are usually around 60-61%.
