Once you secure your place in the first dunnage release, your whisky will begin a quiet transformation towards something rare.
For full barrel owners, there is a moment of choice. An opportunity to select the vessel that will shape its character. A limited number of special barrels have been set aside for those seeking something truly distinctive.
Then the journey begins.
Your cask will be laid in the cool, dark stillness of the underground.
Seasons will pass above it. Summers will come and go. Rain will fall on the soil overhead. While below, your whisky will deepen – in maturity, in character, in complexity.
In a stable, constant environment – ageing perfectly.

Yes. The Dunnage Project is backed by $200,000 in Victorian Government investment, with the initiative publicly supported by Jaclyn Symes MP.
Her backing reflects recognition of the project’s role in putting Australian whisky on the worldwide stage and supporting innovation within the local spirits industry.
The whole rational behind this project is longer term ageing so we’re looking at 10 years as a baseline. Tier three Legacy Dunnage Members with a full barrel will have complete flexibility as to when they bottle.
They do. Barrels “breathe” more with wider temperature swings, and that can be an important factor in creating a well-balanced younger whisky. But when we’re aiming for something 10+ years old, those fluctuations can start to work against us. In the dunnage, the barrels mature more slowly — breathing gently and steadily, almost like hibernation or meditation.
No, we have grown every year since sales started in 2020. We are 100% self-funded and sole owners of the business. All growth is funded from profits.
No. This is not an investment scheme. It’s simply an opportunity to age a barrel of whisky with Kinglake Distillery. We’re aware that some barrel “investment” models in the past have reflected poorly on the Australian single malt industry. That’s not what this is. This is about long-term maturation, transparency, and working directly with us. We’ve already laid down many smaller casks with customers over the years and are happy to provide references from people who’ve been part of that journey.
Of course, the finished whisky (or barrel for Legacy Dunnage Member’s) is yours to do with as you wish.
Every year our insurance premiums are adjusted based on volume of whisky under-bond. A copy of our policy is available on request.
Yes. And we’re building for far longer than that. We live on the property. We haven’t sold shares or diluted ownership. We’re not chasing endless product lines — we focus on doing a few things properly and building them slowly.
We’ve entered a 100-year covenant with Greenfleet to protect the land, and now we’re investing in the underground dunnage itself — designed for long-termmaturation in the best conditions we can create.
This isn’t a short-term play. It’s the next chapter of a long one.
